Risjtaffel is a shared dining experience that dates back to the times when Indonesia came under Dutch colonial rule. This custom includes many different sampler dishes that can be enjoyed in a single sitting. Risjtaffel was often used during social situations to impress visiting dignitaries with an abundance of exotic food varieties. This type of banquet stood to represent the multi-ethnic character of the Indonesian archipelago.
When Indonesia gained its independence in 1945, this dining tradition all but disappeared as it was deemed an unnecessary extravagance. However, since the 1990’s there has been a revival and the hospitality industry has given risjtaffel a new lease of life.
Risjtaffel can now be enjoyed at Tapis Restaurant at Kayumanis Jimbaran. Guests can share a number of delicious dishes including beef rendang and grilled satays served with rice, spicy condiments and crackers.
The menu at Tapis takes guests on a flavoursome journey across the diverse regions and cultures of the Indonesian archipelago. Locally sourced Jimbaran Bay seafood is a particular highlight especially when infused with aromatic Balinese spices. A generous Rijstaffel feast for two is a delicious sampler menu created to showcase a range of Indonesian dishes and cooking styles.
A traditionally thatched pavilion is partially enclosed to dine in air-conditioned comfort. Table settings are also arranged outside on a timber deck next to a refreshing body of water for a more tropical dining experience. Tantalizing meals at Tapis are prepared in an open-concept kitchen by a team of culinary professionals.
